I'm going to try to post something food related every Saturday.
Mostly with foods from the farmer's market, garden, or things preserved. From the farmer's market today: cauliflower, romanesco, sweet potatoes, peppers, carrots, a cucumber, broccoli, onions, lettuce, apples and pears.
How to make a vegetable comfort food: add cheese and cream.
I had some cream to use up so the romanesco and some of the cauliflower went in the oven with cream poured over it and swiss cheese sprinkled on top. Baked until bubbly and golden.
Served with leftover mashed potatoes.
Squash soup topped with diced apples and pumpkin seeds cooked with spices.
It can be such a simple thing:
About one cup of diced onion cooked in olive oil until soft + 4 cups of squash
Cooked in 4 cups of water (or chicken broth) until the squash is soft and then blended. I added a tablespoon of white miso too, just before blending. I could have also added that cream.
Tomorrow I might have it over rice, with lentils, wheat berries or with some crispy kale.
So many possibilities...
